Spicy couscous salad from Mr. Penumbra’s 24-Hour Bookstore

SPICY COUSCOUS SALAD recipe:

In a microwave safe dish place 1 cup of couscous + 1 cup broth (chicken or vegetable) + 2 tbsp butter + 1/4 tsp salt. Stir and cook in the microwave for 3.5 minutes on high. Fluff with fork. Let cool completely. Then add 1 Persian cucumber (chopped small) + 1 cup of cooked salmon meat*. Season with a few drops of Sriracha sauce (until you find it pleasingly spicy). Voilà!

For a vegetarian dish, replace the fish with baked tofu or seitan.

*I used a single filet of leftover teriyaki salmon from the night before—you can use canned fish or take a fresh filet of salmon, place it in an oven-safe dish, top with 1 cup of teriyaki sauce and cook for about 20 minutes in the oven at 350 degrees F.
