Grits and Scrambled Eggs inspired by JUST RIGHT JILLIAN by Nicole D. Collier

Ms. Sandy’s grits (salty, buttery, and thick), eggs scrambled with cheese and chorizo, and apple slices with peanut butter (Jillian’s favorite).

There is so much to love about this middle grade novel—a story about a girl learning to come out of her shell. It’s also about intergenerational relationships, community love/support, science, and a lot more :)

RECIPES (for 3)

Grits recipe: 

Bring 6 cups of water  + 1 tsp salt to a boil. Add 2 cups of corn grits (also known as polenta). Reduce heat (to medium-low or low) and simmer gently for about 30 minutes, stirring frequently to avoid sticking, until thick. Remove from heat, stir in 3 tbsp of butter. Salt and pepper to taste. 

Scrambled eggs with cheese and chorizo: 

Whisk 3 eggs in a bowl. Pour in preheated pan coated with 1/3 tsp olive oil. Add grated parmesan and 1/4 cup finely chopped chorizo (here I used turkey bacon) and scramble until cooked. Salt and pepper to taste.

Apple slices with peanut butter: 

Slice an apple in thin slices. Place 1/4 cup peanut butter in small cup, stick apple slices in it.
